I am happy to say my Run Streak is still alive! I got out at 8 o’clock last night for a quick 1.45 miles around the neighborhood just as I had hoped. This little run must have fueled my legs for this mornings run because it felt sooo good! I put in 7.6 miles but definitely could have kept going. I chose to stop though because I am hoping to get another 10 miles in this weekend. Keeping my fingers crossed little miss is feeling up to a longish ride
I am loving this smoothie right now. I tried adding plain, dry oats into a smoothie before but it came out too chunky and chewy. These Overnight Oats blend up really well in a smoothie though, creating a creamy, chunk-free consistency. The addition of strawberries made the smoothie taste exactly like the Strawberries n’ Cream Quaker Oats! Honestly, I was sad when it was gone…
Overnight Oats Smoothie
1/4 c. Oats
1/4 c. Kefir (I used raspberry flavored)
3 tsp. Chia
3 Large Strawberries (or fruit of choice)
1/4 c. Coconut Water
1/4 c. Almond Milk
1/2 scoop Vanilla Protein Powder (I use Plant Fusion)
Couple of Ice Cubes
Swirl of Agave Nectar
Dash of Cinnamon
To make the Overnight Oats: combine the oats with the kefir and 2 tsp. chia seeds. Place in fridge overnight. The following morning, add the oats to the blender with the remaining ingredients and purée until smooth. Pour into a fun glass, top with remaining teaspoon of chia and enjoy!
Yesterday late afternoon a wild-fire broke out near Banning, which is about 40 min. west of us. The wind created major problems causing the fire to quickly build from a couple hundred acres to a couple thousand in under 2 hours. The wind was blowing in our direction so the sky was filled with thick smoke and ashes.
I didn’t want this to interfere with my run streak, but the possibility of running this morning seemed unlikely. When I woke up this morning, the air quality was still poor and I didn’t want to put Layla at risk. Even opening the patio door, the stench of campfire was so strong that I knew it was the right decision to stay inside.
The wind has died down since early this morning and switched direction a little so I still have confidence that I can keep my running streak alive! Knowing I only need to run a mile, I am planning to head out the door this evening for a quick run around the neighborhood loop. It’s about a mile and a half, which shouldn’t take more than 15 min. Although it will still be hot, I don’t think the air quality will be too bad unless something changes between now and then!
On the bright side, I haven’t missed a day of the smoothie challenge!
There have been a couple of smoothie fails, but also some delicious contenders. I typically just thrown a bunch of things in the blender and see what the final product ends up being so I’m not exactly sure on the amounts. However, one
recipe creation I will post tomorrow is my Overnight Oats Smoothie! Just want to get the recipe one more time before I pass it on.
